Recently, someone asked if I could try making some really easy recipes for those especially tough days when you still want something good to eat. I was a little stumped at first, if only because the meals I make are already easy to me—but that does take for granted that I have some things people don't: full mobility, plenty of time to cook, plenty of resources to get the food I'm looking for and the staples that keep my kitchen running. There's a lot that I make that, especially given your circumstances, I could see being a little harder than most!


But one dish I find is simple and uses ingredients easily accessible is a little something that I've seen southern creators make, and that reminds me a lot of something my family in rural Slovenia would make: cabbage, onions, and kielbasa in one big skillet fry. It sounds easy and like there's not much to it, but trust that with ingredients like onion, garlic, cabbage, caraway, and parsley, it's something that can offer all the comforting, protective vibes you're looking for without breaking the bank or your back.

Magic in Cabbage & Sausage Skillet

Now, while no one thinks of cabbage as doing much magically because it's a goofy, tough little ball of leaves, the fact is that it's actually quite chunky compared to the prettier, frillier lettuces. As a result, it's a food that inspires that feeling of substance: it's got some heft when you bite into it, and its own oddly craveable flavor, as well as a long history of a beloved, reliable food for our ancestors. That alone gives the foundation of this meal those same associations: that of reliability, resilience, and sturdiness. Our ancestors made good use of hearty, humble vegetables like cabbage and onions and garlic, and here's no exception when it comes to feeling protected, grounded, and set for the future.


Sure, there’s no earth in this meal—but the fire and the air will help you find the creative, passionate energy and the intellect to communicate your dreams, goals, and ideas. That little touch of water, too, will remind you not to get too deep in your head and stay rooted in your heart through what you do. Invigorating energies of Mars, Mercury, and the Moon likewise support those goals, giving you the energetic potential to heal, dream, get inspired, and make your voice heard even when everything in the world feels so overwhelming, exhausting, and plain rough.


Cabbage & Sausage Skillet


Prep time: 15min

Cook time: 30-45min

Makes 3-4 servings


Ingredients:

  • Half a head of cabbage, chopped or shredded

  • 8 normal sausages (or two packs of kielbasa)

  • 2 medium onions, diced

  • 5 cloves of garlic, minced

  • 1 Tbsp caraway seeds, ground

  • 1 small bunch of parsley, minced

  • Salt & pepper to taste

  • (Optional) Greek yogurt or sour cream to top


Directions:

  1. Shred or chop your cabbage, then toss into a hot skillet with a bit of olive oil. Cook until soft.

  2. Add the onions and cook until softened, another 5 minutes.

  3. Add garlic and fry until fragrant.

  4. Chop your sausages into medallions and toss them into the pan, cooking until heated through.

    1. Optional: fry your sausages in a separate pan until browned on each side, then add to the skillet.

  5. Serve with fresh parsley over top and with a dollop of sour cream or Greek yogurt


Is it glamorous, expensive, or overly time consuming? No. Is it sweet, delicious, and comforting? Yes. And it can help you make some oddly bold magic, all things considered. Try it out! ♥
