Sometimes love requires sending an SOS signal.

It's still not Valentine's Day, but... we're close. Very close.
And if that white chocolate raspberry tart wasn't your thing, then guess what? We've got another delicious recipe right here that'll also do the trick, thanks to Sally's Baking Adventure. (Man, Sally always has some damn good recipes.) You should check out her blog if you like to bake, because I've never gone wrong with something she put out.
Anyway, a friend of mine asked if I had a cherry pie recipe, but the truth is that I've never made one before! I've made apple, pumpkin, pecan, and a very Ukrainian version of blueberry pie (called plyatsok), but never cherry. The only thing I knew about cherry filling on top of it was that weird radioactive goo that comes pre-made in a can, too, so I wanted to try making it from scratch, and to see what kind of magical notes we could get in here to give us another good option for a love spell. For that reason, we're looking at the cherry, lemon, vanilla, and almond here, which is a pretty interesting blend of stuff.

Magic in Homemade Cherry Pie
Now, I've already talked a bit about love spells in my white chocolate raspberry tart recipe, but to recap: no, love spells don't override free will. They just take what might already be there and help it flourish—or put out a subconscious/spiritual signal to whoever is a good match for you.
Anyway, with cherries, these were apparently good for divination spells surrounding love, too, according to Scott Cunningham's Encyclopedia of Magical Herbs, so it's definitely good as a way to signal that you're available for love. More than that, though, it's a fruit often seen in the things we think about when we think of love: Valentine's Day chocolates and other little treats like that. The rich red color, along with its tart-sweet flavor, make it a perfect pairing with more decadent things like chocolate, or with gentler notes like vanilla, which also inspires love and is making its way into this pie.
But when we combine this with lemon, an ingredient known for its purifying and friendship-encouraging energy, and almond, which is more about intellectual thought and wealth, this recipe also becomes something that helps you weed out any partners that can't hit your level financially or intellectually, and promote a love build on mutual respect, friendship, and good ideas. That's a win-win all around.
Once again, we see the Moon and Venus here for planetary energies—but this time, they're joined by that technical, intellectual, fast-moving Mercury, adding some speed and efficacy to things along with good communication. Water is also the king here, which means that this is great for fostering deep emotional ties—all while just a touch of air keeps it light, bright, and swirling with activity and intrigue. Homemade Cherry Pie
Prep time: 30 min
Cook Time: 50-60 min
Makes 6-8 servings
Ingredients:
2 pie crusts (homemade or store bought)
1.5lbs of halved & quartered pitted fresh cherries
2/3 cup (135g) granulated sugar
1/4 cup (28g) cornstarch
1 Tablespoon (15ml) lemon juice
1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
1 Tablespoon (14g) cold unsalted butter, cubed
Directions:
Make or buy your pie crust. If making it, set it in the fridge for a couple hours.
Pit your cherries and split them in half. Cut one portion of them into halves, the other into quarters (this apparently helps the filling be more uniform).
Preheat the oven to 400 degrees.
Mix the cherries with all the other ingredients except the cubed butter and stick it in the fridge while you roll out and blind bake your bottom crust for 5min. (You can let the cherry mix sit for up to 24 hours, though.)
Scoop the cherries out with a slotted spoon and add them to the pie, then pour the juice that came out into a saucepan and reduce until thick.
Mix the cherries with the thickened sauce, then throw the cubed butter on top.
Cover with the top pie crust or do the latticework typical of cherry pies.
Put the pie on top of a big baking sheet (because it will bubble over and make a mess otherwise).
Bake at 400 for 20min, then reduce the heat to 375 and bake for another 30-40min. (Use a pie crust guard towards the end if you need to so the edges don't burn.)
When classic apple gets boring and blueberries are so far out of season that you really don't wanna play with them until summer, cherries are here for you, and boy, do they make a zesty dessert. Try it out yourself this Valentine's Day! ♥
