Is it Valentine's Day yet?

No.

Are we making an edible love spell anyway?

Yes.

Now, over-commercialized love holiday or not, here's the thing: there's always a chance you might find yourself in need of a love spell to sneak into a dessert, because after all, ain't anybody dropping all that money on dinner (drinks, apps, main course) and then shelling out more for some mid desserts. (Nor can most people even eat more at that point.) So what you do, is you make a dessert beforehand, set it in the fridge, and then digest on the drive home before digging in. Genius.

Especially up here in Rhode Island, we got a little something called restaurant week, which takes place a couple weeks before Valentine's Day. Restaurants do special deals and all that to get you in the door, and then you always end up ordering from the regular menu anyway because the deals end up not being nearly as cool looking as the rest of their actual food. I've been around that block several times, and I refuse to be had by it anymore. Hence, we're throwing some delicious ganache in a tart shell and calling it done.

I got the original recipe inspiration from Spatula Desserts, but she was making a bunch of tiny tarts, and I just made it one big tart. I also swapped out raspberry jam for raspberry puree, which I think was the right choice. Nonetheless, we're looking at raspberry, dairy, egg, wheat, and white chocolate for our love spell here, so let's get baking.

Magic in White Chocolate Raspberry Tart

If you're the kind of person that gets squeamish about love spells, then don't worry. There are two ways to think about this energy: one which draws more heavily on the symbols of abundance (like the wheat and dairy), which is good for relationships that already exist, and one where, if you're not so squeamish, focuses more on the actual emotional underbelly of the situation and sort of "hacks" that emotional core of the situation while also protecting your energy (the chocolate, the raspberry).

Whatever you do is up to you, but especially if you're trying to snag a new relationship, it's helpful to remember: love spells don't necessarily override free will. What they do do, however, is inflame the feelings that are already there. It's a magical weapon that focuses on allure, not just brute force and brainwashing, and if you really rock into those feelings of luxury, decadence, flirtiness, fun, and joy that theses ingredients inspire... you'll be able to do a lot more than you think. It almost becomes a glamor that way, when you think about it.

Nonetheless, with only a spot of earth in here to keep us stable and grounded, the rest of this heavily water-based spell means we are digging deep into the emotions of things: the subconscious, the psyche, the darker parts of the heart that usually don’t see the light of day. Living in these emotions and bringing them forth helps to spring up new love like a freshly discovered well, all that intrigue bubbling to the surface, and with planetary influences like Venus and the Moon, it’s a spell that focuses on the beauty above and below the surface. It also reminds us exactly why some people say “Love is War,” as remember: Venus is named after the goddess of both love and war together.

White Chocolate Raspberry Tart

Prep time: 30 min

Cook Time: 30 min

Makes 10-14 servings

Ingredients:

For the Tart Shell:

  • 260g all purpose flour

  • 30g almond flour (optional; replace with regular flour if you don't want it)

  • 90g powdered sugar

  • A pinch of salt

  • 110g unsalted butter, cold & cubed

  • 1 egg

For the Ganache:

  • 175ml heavy cream

  • 175g seedless raspberry jam

  • 12oz white chocolate for baking (I used Ghiradelli's)

  • (Optional) Fresh raspberries for topping the tart

Directions:

  1.  Mix your dry ingredients together and whisk out any lumps.

  2. Crumble pieces of cold butter and the egg into the dough and squish together until you get a solid dough ball.

  3. Press into your tart pan and let sit in the fridge for about 10-15min.

  4. Preheat the oven to 350 degrees Fahrenheit.

  5. Bake the tart shell for 30min, or until golden brown, then set aside to cool.

  6. Break your chocolate into a bowl and set aside.

  7. Mix heavy cream and raspberry jam in a saucepan and heat until warm and mixed together. DO NOT LET IT BOIL or you'll get weird clumps and curdles in your mixture.

  8. Pour the hot mixture over your chocolate and mix well until smooth.

  9. Pour the mixture into your cooled tart shell and then stick in the fridge to set for 3-4 hours. (It'll still be creamy and tacky, so be careful putting a cover on it or anything.)

  10. Pop some raspberries on top and let warm up to room temperature for an hour before serving.

This stuff is rich, heavy, and absolutely delicious. Seriously, it tastes like heaven, and you don't need a lot to satisfy your sweet tooth after dinner. It also has such a pretty color that makes it all the more enjoyable to look at and eat. Plan this out for your next date night and enjoy! ♥
