Alright, listen: now that Lent is over, we can maybe take a break from all our serious poor man recipes and instead break out some delicious treats for the warmer weather. These cookies, which I found on Slovenian Kitchen by Michelle, are ones that are quick, simple, easy, and full of bright lemony flavor—exactly what we want for our outdoor lunches, picnics, and all that other good stuff. But it's a European cookie through and through, because it's got some differences from a standard sugar cookie.


The main ingredients we're looking at today for our magic are the lemon, vanilla, egg, and almond. Yes, almond. All of these things together make the sweetest blend of magic for growing and maintaining some great, stable friendships, so let's get into it.


Magic in Slovenian Lemon Cookies (Limonini Piškoti)

While the lemon hex has become a little (in)famous on TikTok, the reality is that lemons can be used to help as much as they can be used to sting. In fact, onse of their most famous uses is for specifically friendship, along with purification and love. It's why it's a great ingredient to include if you're bringing something to a pot luck or a new friend's place!


But combine that with vanilla, egg, and almond, and you also have the basis for yet more loving, sweet energy and plenty of abundance, as well as protection, rebirth, and new beginnings (making these especially great if you're leaving a friend group and creating another). Almonds, too, are associated with wisdom, making it easy to discern your new friends, as well.


With the energies of Venus, Mercury, Pluto, and the Moon, as well as water and air with the tiniest touch of fire from Pluto's influence, these cookies are all about a sense of calm, grounding, and intellectual strength. These planets are ones that focus on the emotional state of mind, balance and beauty, and good communication skills, and these elements likewise support these endeavors. No high passions, no intensity, no aggression—just a mellow, thoughtful, and peaceful vibe to help you connect with those around you in a gentle and authentic way.


Slovenian Lemon Cookies (Limonini Piškoti)


Prep time: 10min

Cook time: 10min

Makes 5 servings


Ingredients:

Dough:

  • 3 egg yolks 

  • 1/2 cup + 1 Tbsp sugar (120g) 

  • 1 package of vanilla sugar

    • If no vanilla sugar, 1 Tbsp vanilla extract and a little more almond flour will do

  • Zest from 1 lemon 

  • 2 cups of almond flour (adding up to another 1/2 cup if required) (200-250g)


Icing:

  • 3/4 cup powdered sugar

  • 2 Tbsp fresh lemon juice


Directions:

  1.   Separate egg whites from yolks, then add yolks to bowl along with all sugar.

  2.  Beat until creamed together, then add vanilla extract if using extract and beat to combine.

  3.  Add zest of one lemon, mix well, and then add almond flour. 

  4.  Mix to combine, then turn onto a counter coated with almond flour or powdered sugar and roll out to ½ inch thickness.

  5.  Bake at 350 for 8-10 minutes, or until very lightly browned.

  6.  Let cool completely, then brush with your icing.


I dunno about y'all, but I have such a hankering to go on a picnic. This summer is definitely one where I need to get outside and do that, and I think I'll be bringing these cookies with me when I do. Sweet, simple, and delicious, they're sure to be a hit, so try them out! ♥
