I got more basil than I know what to do with, and this is such a quick fix for that.

Sooooo, my basil plants are going crazy. Which is not a bad problem to have. Except for the fact that I don't know what to do with it all now!
I could make pesto, of course—or add it on top of margarita pizzas or the like. But that's so much effort (and stove use in this hot time), and that's annoying. However, what isn't annoying is grabbing a box of crackers, some fresh tomatoes, and a bunch of basil to make what is basically the Italian version of salsa: bruschetta.
It's so quick. So easy. And the flavor is so bright! Of course, I'd have to tell you a little bit about this, because it's delicious, perfect for cook-outs or garden parties, and full of fun socializing magic. As such, we're focusing on four of the six ingredients required: the olive, garlic, basil, and tomato.
Magic in Homemade Bruschetta
I think we all have those moments where we try to host a party, or even go to a party with something in hand, and realize we're way more nervous than we thought we were. It happens to the best of us! But with things like garlic, known for keeping evil influences away, working together with the fiery, protective qualities of things like basil and olive, all while the bright, tangy tomato puts some pep in your step... yeah. This'll give you not only some zen for social situations, but actually a brightness that makes it even easier for others around you to let loose and enjoy themselves, too!
So whether you’re in need of some luck out in social situations, or just some peppery protection from social awkwardness, this blend has all the right things to wake you up and add a little bit of charm to your interactions.. All the fire here gives a punchy, exuberant energy, while the touch of water reminds you to choose diplomacy and good vibes—as does all that Mars with the little smattering of Venus. It’s summer in a bowl, and it’s so easy and delicious!
Homemade Bruschetta
Prep time: 10 min
Cook Time: N/A
Makes 3-4 servings
Ingredients:
2 cups of cherry tomatoes, quartered
1 bunch of sweet basil, minced
4-5 cloves of garlic, minced
1 Tbsp balsamic vinegar
½ Tbsp of olive oil
Salt to taste
Directions:
Cut up your tomatoes and add them to a bowl with a lid or a tupperware
Mince basil and add to bowl.
Mince garlic and add to bowl.
Add olive oil, vinegar, and salt, and stir well
(Optional) allow to sit for up to three hours to let flavors marry
Eat with mini toasts, crackers, baguettes, etc.!
This amount makes a bowl good enough for a couple people to enjoy at home, so feel free to scale it up as you see fit! As for me and my fiance, I can tell you that we love just snacking on something like this with a sleeve of crackers. It's so refreshing on hot days. Definitely try it out! ♥
