As one might imagine, it's easy to go buck wild buying corn when it's so damn cheap. But that just means you end up with a bunch of corn in your fridge that you don't know what to do with.
Luckily, if you have a little milk, some flour, and a couple eggs, you can make yourself the beginning of these delicious corn fritters. With a few tweaks, you can also make them into a spell that takes a bit of a different direction from our previous corn meal, and that's why we're looking at the honey, cinnamon, paprika, corn, and onion in today's dish!
Magic in Sweet Heat Corn Fritters
I always look at spicy things like paprika, hot peppers, etc. as things that "light a fire under your ass," and to be real, that's exactly what we want here. As much as I love Virgo season, the truth is that Virgo can get a little neurotic and by-the-book about certain things, and if you're already feeling stifled by routine, then trust me: this mix of ingredients is like a spiritual powder-keg to get you back into your creative groove.
Only a little touch of earth grounds this otherwise powerful, fire-based meal. Likewise, only a tiny whisper from Venus adds that sparkle to an otherwise large influence from Mars and the Sun—two celestial bodies known for their fighting spirit and their radiant, life-giving glory. Like the arrow on a compass pointing north, the Earth/Venus combination here points all the creative, ambitious, powerful energy towards the things that are beautiful, balanced, fair, and sustainable; let this be the fuel for all your creative endeavors that make your life and the lives of those around you that much more lovely!
Sweet Heat Corn Fritters
Prep time: 10 min
Cook Time: 10 min
Makes 8-10 Fritters
Ingredients:
3 ears of fresh corn
(Optional) 6-10 chili peppers
1 ½ cup (180g) flour
¾ cup (180ml) milk
2 eggs
20g (1 ¼ Tbsp) honey
8g (2 tsp) onion powder
8g (2 tsp) garlic powder
4g (1 tsp) cinnamon
4g (1 tsp) paprika
4g (1 tsp) baking powder
Directions:
Strip the corn off the three ears and put in a bowl.
Mix the corn with flour, baking powder, spices, and chilis, if using them.
Beat two eggs with milk and honey, then mix into the corn and flour mixture.
Cover the bottom of a skillet with a neutral oil (like canola) and heat to medium-low.
Take fist-sized scoops of the corn fritter mix and add to the pan, frying until golden brown on each side (about 2 - 3 minutes).
Place them on paper towel lined plates to absorb excess oil.
Serve with sour cream, Greek yogurt, or other sweet-savory dipping sauces.
This is the first time I've ever made corn fritters, and if I can be real with you, I didn't realize I'd like them as much as I did! (After all, it's really just... corn stuck together with some flour, egg, and milk, if you think about it.) But the crunchy outside and fluffy inside, along with the heartiness and sweetness of fresh corn mixed with these spices, is so satisfying. Definitely try it out with your favorite dip! ♥
