The pea harvest has come, and boy, do we have meal and snack materials for days.

Well, wouldn't you know? We are finally coming into Cancer season, and with that, we can turn our focus away from the outer world, and more towards the inner world: the home!
If you've been feeling like you need to get away from the noise of the outside world, this season is probably your jam. My endlessly hustling ass doesn't really like to feel my feelings, but every now and then, we do gotta slow down and enjoy them, don't we? As such, with the pea harvest coming in from my early spring planting, I decided maybe it's time to make a quick, easy meal that makes use of tasty, fresh vegetables.
While I cross referenced and adapted a few different stir fry sauce recipes for this shindig, the reality is that stir fry just requires any crunchy vegetables you like and a protein, like chicken. As such, we're looking at a few things in this magical line up: the peas, water chestnuts, ginger, and basil.
Magic in Chicken and Snap Pea Stir Fry
If you've never seen a pea flower, I highly suggest you look them up! They're so cute, and the plants themselves have leaves that look like butterfly wings, with how they grow. Even if they're classically associated with Venus and Earth, I think there's a whimsy to them, and a cooperative way that they grow (as they cling to each other and to trellises), that also makes them really good for any magic associated with whimsy, support, and community. When you add that to the spicier things like basil and ginger, as well as the crunchy goodness of the aquatic water chestnut, which thrives in the marshes and wetlands, you have a bunch of light, free, and creative energy to go along with all the emotional support and brevity you might be looking for.
This dish deals mainly with fire, with a touch of earth and water to ground and mellow all that big, bold energy. Think of turning a raging inferno back into the secret, private warmth of the hearthfire, which is good to share with friends and family you want to keep near. Add to that the planetary influences of Mars and Venus, and you also have the scales of power and beauty equally balanced. Not too much rough and tough energy, not too much gentle and cushy energy: the perfect energetic texture to add to the home!
Chicken and Snap Pea Stir Fry
Prep time: 30 min
Cook Time: 30 min
Makes 3-4 servings
Ingredients:
For the Sauce:
1 cup soy sauce
2/3 cup water or chicken stock
2 Tbsp cornstarch
1 Tbsp rice vinegar
2 tsp fish sauce
2 Tbsp honey
1 1/2 Tbsp garlic powder
1/2 Tbsp ginger powder
For the Stir Fry:
2 onions, sliced thin
2 bell peppers, sliced thin
1 can of water chestnuts, drained
1 1/2 cup of snap peas, washed and trimmed if necessary
2 lbs chicken thigh, fat trimmed and meat cubed
Salt & red pepper flakes to taste
(Optional but highly recommended) fresh Thai basil for garnish
Directions:
Chop your onion and pepper, adding salt and red pepper flakes, then add to an oiled pan to fry until lightly softened. Set aside.
Cut and cook your chicken until cooked through.
While chicken is cooking, mix your sauce ingredients and set aside.
When chicken is cooked, add onion, vegetable, and water chestnut to the chicken with the sauce. Reduce until thickened.
In the last 3-5 minutes of cooking, add the snap peas to the pan.
Serve with rice and enjoy!
The fun thing about stir fries is that they really don't take that long to put together. Chopping a few things and waiting for the chicken to cook through is the most time consuming part of it, and it's a great way to get a big helping of vegetables into a quick weeknight meal! Try it out! ♥
