Chicken Quesadillas for Lighting the Leo Season Fire | Sara's Kitchen Witchcraft

Leo season is here, and that means we need to turn the fire up.

Alright, y'all—it's Leo season! (Which means we're only one season away from my favorite, AKA Virgo season.)


However, before we get back into that grounded earth sign goodness, we have to go nuts with one last hurrah for summer, and that comes to us with Leo season. Leo, the fixed fire sign that is ruled by one of the two luminaries (the Sun) and rules over the fifth house of creativity and expression, is a sign that tells us we really ought to get some more decadence, fun, and boldness in our lives, and there's no better way to do that than with some cheesy, spicy chicken quesadillas.


And the best part? These are so easy to make, and delicious when paired with a salsa of your choice and some sour cream. To that end, for the magic this time, we're focusing on the peppers, cilantro (coriander), cumin, and cinnamon.


Magic in Chicken Quesadillas

Now, one thing you might notice is that most of the stuff we're focusing on actually has Mars as its main planet, even if it's fire based. Cinnamon is where we get specifically that sun/fire combination. Even still, given the crazy placements and transits we've got going on this July/August, the thing is: we need some fighting spirit as much as some feel-good energy! These kinds of spices are great not only for increasing power and potential, but also for scaring away negativity and burning off any dingy, icky vibes that are dragging us down while we try to live our lives.


With that said, that's right: you'll notice this is pure fire in this recipe energy blend. More than that, it's all Mars with a touch of Sun, meaning you've not only got the means to put yourself in the spotlight, but to fight off any issues with confidence, fear, or lack of passion/creativity that might come with that. It's like having the King's Guard around the King himself, with all this set-up, and that means a burst of energy and exuberance for your social situations.

Cook Time: 20 min

Makes 2-4 servings


Ingredients:


  • 1.5 - 2lbs chicken breast, cut into small pieces

  • 2 bell peppers, diced

  • 1 big onion, diced

  • 4 full size tortillas

  • 2 cups shredded cheese

  • 1.5 Tbsp cumin

  • 1.5 Tbsp onion powder

  • 1.5 Tbsp garlic powder

  • 1 Tbsp chili powder

  • 1 Tbsp dried oregano

  • 1/2 Tbsp cinnamon

  • Olive oil for pan frying

  • Salt and pepper to taste

  • Fresh cilantro for garnish

  • (Optional) sour cream/Greek yogurt and salsa of your choice


Directions:

  1.  Dice onion and peppers, then fry in olive oil until softened

  2. Add diced chicken to the pan and cook through

  3. While the chicken is cooking, add salt, pepper, and seasonings, stirring well

  4. Remove everything from the pan and clean it out so nothing burns on the bottom.

  5. Lay one tortilla down and cover with 1/2 cup of cheese.

  6. Put 1/4 your meat/veggie mix on one half of the tortilla.

  7. Add cilantro garnish to the meat/veggies.

  8. When the cheese melts on both sides, fold one side of the tortilla over until you have a half circle.

  9. Let the tortilla get lightly crispy on one side, then flip and crisp the other side

  10. Cut into 4 triangles, then serve with salsa and sour cream/Greek yogurt.


These are so very delicious, and super filling. If you use Greek yogurt instead of sour cream, too, you also get a really nice protein bump on top of the chicken you're already eating, which is nice. But when you're craving something spicy, hearty, and full of flavor, this is a go-to—and perfect as an indulgent meal for boosting your inner fire! ♥
