Gemini Season's Cucumber Radish Salad for the Budding Socialite | Sara's Kitchen Witchcraft

Guess who just ripped up all her radishes to make way for the summer garden?

And that means that, as Gemini season crawls right up to us, we gotta get ourselves together and get a little edible spell going for communication, intellect, discernment, and an ever freer, more open heart. This cucumber radish salad, which I've slightly adapted from The Mediterranean Dish, is one that brings all kinds of crunchy, zesty, fresh vegetables into the occasion—so save this recipe for those weird hot days, or for when you want to eat your weight in veggies and die of flavor, honestly. This was so good and perfectly shows off the bounty of late spring/early summer.


Our magic is coming from, naturally, the radish, mint, chive, dill, and lemon, and if you want, of course, you can focus on that cool cucumber, too—but today it's all about the zest for life and the capacity for great conversations with awesome friends. Gemini season, baby!

Magic in Cucumber Radish Salad

As I was saying: Gemini season.


That's where we're at now, and given Gemini is the mutable air sign ruled by Mercury and overseeing the third house of communication and intellect, this is the season for activating your mile-a-minute talking at the cookout. Especially with things like mint and chives and dill, which are all ruled by Mercury and have that light, punchy, bold flavor, there's plenty of that high-functioning, high-intellect energy to infuse into this salad. Throw in the lemon's capacity for purification and encouraging friendship, and this is the socialite's favorite meal at or before the party starts. And the little radish! It grows so quickly into big, beautiful red rounds, with that fresh, almost zesty crunch—a perfect partner for some extra boldness and bravery out in the spotlight with your friends.


With elemental energies like air, fire, and water, as well as planetary influences like Mercury, Mars, and the Moon, this is a blend of influences that'll keep you anything but grounded, sure—but you can't be all too grounded if you're going to have your head in the clouds and your spirits soaring, right? Courage, confidence, communicative skill, and that friendly aura, all of that can be improved upon with the help of these plant allies within, and as we finally kick summer off, that'll be more necessary than ever.


Cucumber Radish Salad


Prep time: 15 min

Cook Time: 5 min

Makes 1-2 servings


Ingredients:


For the Dressing:

  • 1 Tbsp honey

  • 1-2 tsp olive oil

  • 1 Tbsp lemon juice

  • 1 tsp garlic powder

  • 1 pinch of salt


For the Salad:

  • 1 large cucumber, sliced

  • 3 ribs of celery, choped

  • 1 cup of radishes, sliced thin

  • 1 Tbsp fresh mint

  • 1 Tbsp fresh dill

  • 1 Tbsp fresh chives

  • (Optional) a protein of choice, such as chicken or boiled eggs

  • 1-2oz feta cheese


Directions:

  1. Chop your vegetables and put them in the bowl.

  2. Finely chop your herbs and put those in the bowl, too.

  3. Combine your dressing ingredients well, then toss over the salad and mix well.

  4. Throw your feta and whatever protein you like in there.

  5. Eat the salad.


Literally so easy. Takes maybe twenty minutes if you aren't screwing around in the kitchen. And it's so good with all the fresh herbs! Especially if you like to garden, this is the salad for quick dinner nights when it gets hot out. Try it out and enjoy! ♥
