I got tarragon growing and need to use it, so here we go!

No one will argue with me if I say European food is good. Of course it's good. But it's also heavy. And hearty. And full of straight meat and potatoes. I love it, of course—but after two weeks of eating it while traipsing around the Czech Republic and Austria, I'm craving something a little lighter, and especially so now that I've come home to my herbs popping off and looking so lush and green! My tarragon is so big and bushy already, and I gotta use it while it's got its strong flavor, y'know?
(By the way, if you have a patch of dirt around your home... plant tarragon. Comes back every year and really doesn't need a lot of care to do so. Herbs are basically just weeds we decided we liked, if you think about it.)
Still, with things like peaches also in season, we have some great things to use for magic: peaches, tarragon, cinnamon, chili peppers, and cumin. This (and a lot of other things in the recipe, honestly) make for a blend that's perfect for starting the beginning of summer.

Magic in Fish Tacos and Peach Tarragon Salsa
A big thing we gotta think about here, honestly, is freshness. There's nothing more wonderful than fresh herbs or fruits, and especially so when it comes to salsa. Sweet, light, bold, it's got all kinds of flavors that'll perk up anything from a plain chip to a taco, and this is no different. Moreover, just like with the grilled peach and tarragon marinade we made for chicken last year, we've got some really cool magic to work with the "little dragon" (tarragon) and the peach: magic that's all about love, confidence, power, and the banishing of evil and misery. It's a fantastic, and very summery, flavor/magic combo.
To that end, you just know that absolutely nothing will be able to crash your vibe with a spread of energies like this. Fish Tacos with Peach Tarragon Salsa

Cook time: 30min
Makes 2-3 servings
Ingredients:
For Fish Tacos:
4-5 tilapia filets
1 whole lime
1 Tbsp olive oil
Fish taco spice rub
3 Tbsp ground cumin
2 Tbsp smoked paprika
1 Tbsp garlic powder
1 Tbsp dried oregano
1 Tbsp salt
½ Tbsp cinnamon
2 tsp ground coriander
2 tsp onion powder
2 tsp ground turmeric
1 tsp ground black pepper
1 tsp ground cayenne or carolina reaper pepper
Small taco tortillas (soft or hard)
For Peach Tarragon Salsa:
2-3 medium peaches, peeled and diced
1 small red onion, diced fine
2-3 jalapenos (or 1 bell pepper if you don’t like spice, or a few bird’s eye or other spicy chilis if you do!)
1 ½ Tbsp fresh tarragon leaves, diced
½ to 1 Tbsp balsamic vinegar
Pinch of salt
Directions:
Dice salsa ingredients, mix in a bowl, and set aside.
Heat olive oil in a pan on medium-low and lay down fish filets in the pan. (Be careful not to crowd them!)
Sprinkle with your fish taco seasoning and quarter of a lime’s worth of juice, then flip once cooked (about five to seven minutes).
Sprinkle the other side with lime juice and seasoning, then wait until cooked.
Prep your toppings as they cook! Some options include:
Sour cream (or plain Greek yogurt)
More minced onion
The other half of the lime (or more limes if you like them and so does everyone else)
Avocado
Shredded cheese
(Optional) Toast your tortillas in a pan to warm them up and give them a little more color.
Fill your tacos with fish, salsa, and your toppings and enjoy! ♪
You can also chill this and serve it cold instead of hot, and save it for when you want a sweet treat!
