Who said chicken and rice dishes had to be boring, y'know?
Well, here we are again. Chasing health goals... and not wanting to eat the same old boring chicken and rice over and over.
Here's the thing thought: there are a surprising amount of dishes that count as chicken and rice. Like, technically chicken paella? Or any of my grilled chicken dishes with rice on the side instead of salad or pasta? Even my coq au vin, technically, is chicken and rice in my eyes. It doesn't all have to be whatever sad, boiled, lifeless piece of carcass gym bros are tossing on top of some equally sad white rice with a couple heads of sad microwaved broccoli.

With that said, this recipe takes the cake as quick, easy, and yet somehow still so decadent-feeling. Likely because of the roux. But so long as you actually keep track of what you're eating, then even when you're trying to reign it in a bit, you can have this delicious dinner on the table in about an hour, I'd say. (And before anyone cries about there being butter or oil in general in here you need fats to function; relax.)
In this meal, to really ramp up our vitality, we're looking at the carrot, tarragon, thyme, and onion in this dish to push us towards the right frame of mind for loving and caring for ourselves.

Magic in Chicken Fricassee
Now, I'll have you know that this is a French dish, and that means tarragon actually makes an appearance here, which is awesome! I'm always looking for new ways to use that one bush of it I planted behind my house.
And we talked about it before, but tarragon, AKA the little dragon, is quite the herb! It's not only great for love spells, but also for confidence, power, and banishing negativity. The other items, carrot and thyme and onion, only enhance all of these things and create an even more charged circuit to focus your magic into. They link together like a good bracelet, each adding more love, more courage, more protection, more vitality, more passion, until you get a big boost for all your self love, confidence, and power.
In here, the element fire is ever so slightly tempered by water, and Mars held ever so slightly in check with Venus. While power and vitality is important, we can't have you burning out and fizzling, after all! This blend will help you drive for what you want while also remembering to be kind to yourself and appreciate yourself as you are now, along with what you can be when you put in the effort to make lasting, consistent change in your mental, physical, and emotional health.
Chicken Fricassee
Prep time: 20 minutes
Cook time: 30 minutes
Makes 4-6 servings
Ingredients:
1 1/2 lb boneless skinless chicken thigh
1 onion, diced
4 cloves garlic, minced
3 carrots, peeled and chopped
8oz mushrooms, washed and chopped
1 bunch fresh thyme (or 1/2 Tbsp dry)
1 bunch fresh tarragon (or 1/2 Tbsp dry)
1/4 cup white wine (chardonnay)
1 1/2 cup chicken stock
1/3rd stick of butter
1/3 cup flour
1 egg
1/3 cup Greek yogurt
1 Tbsp lemon juice
1/2 tsp nutmeg
Salt and pepper to taste
10oz dry white rice
If you aren't a fan of wine in your meal, replace it with an equal amount of lemon juice and water (so ration wise for 1 cup of wine: 1/4 cup lemon juice, 3/4 cup water).
Directions:
Cut your chicken into bite sized pieces and cook in a small pat of butter until halfway cooked through. Set aside.
Dice onion and cook in the remaining amount of butter until soft, then add minced garlic and fry until fragrant.
Add mushrooms and carrots, frying until starting to brown (about 10min).
Add white wine and deglaze pot, then let cook until wine is almost cooked out.
Add flour bit by bit until the liquid is completely absorbed and the mixture is thick. If you want it thicker, add more flour; if you want it less, add less. Just make sure all the flour gets hydrated.
Slowly pour in chicken stock, bit by bit, until fully incorporated with mixture.
Add thyme, tarragon, and cooked chicken, then let simmer for 20min.
Meanwhile, beat one egg into Greek yogurt, then add lemon juice and a little nutmeg.
Add a bit of the mushroom liquid to the yogurt mixture at a time, stirring constantly to temper the sauce, then slowly add into the rest of the pot. Stir well to make sure your egg doesn't get cooked in the middle of it.
Cook rice until done, stirring the mixture occasionally in the meantime to ensure it doesn't burn.
Honestly, this is a comfort meal as much as it is a power meal. It's creamy, hearty, flavorful, and soaks so well into the rice. If ever you need a chicken and rice dish that doesn't make you bored to tears, and want to feel nice and cozy at the end of a long day, this is the dish! Enjoy! ♥
