I'm so ready for apple everything.

It's apple season here in New England, baby!
While in my mother's country, Slovenia, apples are no big deal (just about everyone has one in their yard out in the countryside, seriously), in New England, we love a good apple picking expedition. Most people in America just don't grow fruit trees, which is a shame! (Though my mom and I sure do bitch up a storm seeing one person in her neighborhood with two apple trees just letting all the apples fall on the ground and go to waste, but whatever.)
I'll tell you, when I one day own a house... orchard. Immediately. I'll be planting every type of fruit and nut tree I can fit on my property that'll actually survive our winters.
Anyway, with the apple season here, and the apples on the shelves all ripe and fresh and pretty, I thought: why not make a sweet treat? It's been a hot minute since we had a proper baked good here, and with just butter, sugar, flour, salt, an egg, some spices, and a couple Granny Smith Apples, you can easily throw a treat together to have by lunchtime. I've adapted this recipe after getting some inspiration from Cravings Journal.
Specifically for this recipe, we'll be looking at cinnamon, pecans, butter, sugar, and apples (of course) for our magic. So let's dive in!
Magic in Caramel Apple Blondies
Now, the only other place these classic fall spices are going to appear is in something beautifully apple-based, like pies or muffins or these blondies here—and of course they have the same function. These warming spices are meant to perk you up, as well as get you remembering the sunlight as the days get shorter and the air gets colder. More than that, with additions of things like nuts (pecans), you can imagine yourself planting all your dreams and ambitions to "over-winter" and bloom next spring.
Truth be told, we’ve got a little bit of everything here, and that’s perfect for getting a sense of balance. With all elements here, as well as planets of luck. love, and communication like the Sun, mercury, the Moon, and Venus, what you have is a blend of energies that’ll help you see the beauty in life (and keep it around, too)! Pumpkin Spice Frozen Yogurt Bars
Prep time: 40min
Cook Time: 20min
Makes 9 blondies
Ingredients:
180g (about 1 ⅔ stick) unsalted butter
250g (1 cup) dark brown sugar
270g Granny Smith apple, peeled and cut in small cubes (about 2 apples)
¾ tsp salt
1 tsp ground cinnamon
¼ tsp allspice
¼ tsp nutmeg
1 egg (cold from fridge)
230g (about a cup) all-purpose flour
(Optional) ¼ cup crushed pecans
Directions:
Put butter in a pot and let melt and heat. It will bubble; stir it a bit, but let it cook until little brown bits show up and it stops bubbling loud as hell
Add apples, sugar, and salt into the pot and stir.
KEEP STIRRING for about 10-20min, until the caramel is thick and all the apples start moving together with the sauce.
Put in a bowl and let cool until it doesn’t burn you when you touch the side of the bowl.
Mix your flour and spices together in a separate bowl.
QUICKLY add the egg and beat it in, then add your mix of flower and spices.
Prepare a square brownie pan with parchment paper and pour the batter in evenly.
Bake at 350 for 15-20min, or until cooked but still gooey inside when you poke it with a toothpick.
Let cool on a rack before cutting them.
These smell so good, it's unreal. I will say: please do not try to taste the caramel as it's cooking because it's hot as hell, but otherwise, do enjoy these incredible and easy treats. Homemade caramel, apples, cinnamon? What's not to love about that? Keep these around when your sweet tooth needs a fix or bring them to the local autumn get-togethers to share the wealth! ♥
